Baking Ideas with Sparkling Water

It’s starting to feel like cozy season. And what better way to spend it than baking some scones or starting the day with pancakes featuring refreshingly real Skinny Fizz.
We’ve got a couple recipes up our sleeves that will make your mouth water. All made with love and sparkling water. Pick your favourite can and try one of these unreal recipes.
Scones

For our scones, we adapted the recipe from the good ol’ Edmunds cookbook.
Ingredients:
- 3 cups flour
- 1 tsp xanthan gum
- 1/2 tsp salt
- 250ml Lemon Skinny Fizz
- 250ml cream
- 1 egg (optional)
Instructions:
- Preheat oven to 200 degrees.
- Sift flour, xantham gum and salt into a bowl and mix.
- Mix in Skinny Fizz and cream in a jug and add to the dry ingredients, mixing into a dough.
- Place dough onto a floured surface and roll out to 2cm thickness.
- Cut and place onto a baking tray.
- Beat an egg and brush mixture across the dough, leaving to rest for 10 minutes.
- Bake for 15 minutes or until golden brown.
Pancakes

Ingredients:
- 2 cups flour
- 1/4 tsp salt
- 1/2 cup sugar
- 4 tsp baking powder
- 2 eggs
- 1/4 cup melted butter
- 1 & 2/3 cups lemon Skinny Fizz
Instructions:
- Whisk together flour, salt, sugar and baking powder.
- Add the eggs, melted butter and Skinny Fizz to dry ingredients then whisk to combine.
- Proceed to cook delicious pancakes!
Bagels

Ingredients:
- 2 cups all-purpose flour
- 1 cup Skinny Fizz
- 1 tbsp sugar
- 1 tbsp olive oil
- 1 ½ tsp salt
- 1 tsp baking powder
- 1 tbsp instant yeast (or active dry yeast)
- Optional toppings: sesame seeds, poppy seeds, everything bagel seasoning, or coarse salt.
Instructions:
- In a small bowl, combine ½ cup of sparkling water with the sugar and yeast. Stir gently to dissolve and let it sit for about 5–10 minutes, or until the mixture starts to bubble or foam.
- In a large mixing bowl, combine the flour, salt, and baking powder.
- Add the yeast mixture and remaining sparkling water. Add oil and stir until a dough forms.
- Place the dough on a lightly floured surface and knead until it becomes smooth and elastic. If the dough is too sticky, add a bit more flour. If it’s too dry, add a little more sparkling water.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise for 1 hour.
- Preheat oven to 200 degrees and line a tray with baking paper
- Punch the dough down to release the air then divide into 8 equal pieces rolling each into a ball and poking a hole in the centre.
- Boil a large pot of water, adding a pinch of salt. Add a couple bagels to the boiling water at a time, cooking for about 1–2 minutes on each side.
- Place the boiled bagels on the baking tray and brush the tops with beaten egg, adding your choice of toppings.
- Bake for 15-20 minutes or until the bagels are golden brown and sound hollow when tapped on the bottom.
