  • ⅓ cup oil
  • 1 egg
  • ¼ cup sparkling water
  • 1 tsp vanilla essence
  • 1½ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon (optional)

Optional add-ins

  • ½ cup chopped walnuts
  • ½ cup chocolate chips

Method

  1. Preheat oven to 180°C. Grease or line a loaf tin.
  2. In a bowl, mash the bananas. Stir in sugar, oil, egg, sparkling water and vanilla until combined.
  3. In a separate bowl, whisk together flour, baking soda, salt and cinnamon.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Fold in chopped walnuts and chocolate chips.
  6. Pour into the loaf tin.
  7. Bake for 45–55 minutes, or until a skewer comes out mostly clean.
  8. Cool in the tin for 10 minutes, then transfer to a rack to cool completely.

French Toast

Ingredients

  • Thick bread
  • 2 eggs
  • ½ cup milk
  • ½ cup Skinny Fizz
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Pinch of salt

Method

  1. Whisk together eggs, milk, vanilla, cinnamon, sugar, and salt until smooth.
  2. Gently stir in the sparkling water, being sure not to over mix.
  3. Melt butter in a pan over medium heat. Coat both sides of the bread slices in the mixture, letting the excess drip off.
  4. Cook each side of the bread until golden brown.
  5. Stack on a plate & add your favourite toppings!

Chocolate Raspberry Brownies

Ingredients

  • 150 g dark chocolate
  • 100 g butter
  • ¾ cup brown sugar
  • 2 eggs
  • ½ cup sparkling water (plain or lightly flavoured like berry)
  • 1 tsp vanilla extract
  • ¾ cup plain flour
  • ¼ cup cocoa powder
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¾ cup fresh or frozen raspberries

Optional add-ins:

  • ¼ cup dark chocolate chips

Method

  1. Preheat oven to 180°C and line a 20 cm square baking tin with baking paper.
  2. Melt the chocolate and butter together. Stir until smooth.
  3. Add sugar and mix well. Let cool slightly.
  4. Whisk in the eggs and vanilla until the mixture becomes glossy.
  5. Pour in the sparkling water and gently stir to combine. (This helps keep the brownies light.)
  6. Sift in the flour, cocoa powder, baking powder, and salt. Fold together until just combined.
  7. Fold through raspberries and chocolate chips.
  8. Pour into the lined tin and spread evenly.
  9. Bake for 20–25 minutes until the edges are set but the centre is still slightly soft.
  10. Cool in the tin, then slice into squares.
